Pavo a la Brasa (Smoked Turkey)



Pavo a la brasa (charcoal smoked turkey), cooked in the Big Green Egg at very a low temperature for several hours. Made "aguadito" with the carcass -- phenomenal smoky flavor.

Tiradito de Atun (Tuna Tiradito)


Thin slices of raw tuna marinated in orange juice with a toasted sesame sauce (not shown in the picture, added to the individual plate when served).









Causushi (Causa Sushi)


Like sushi rolls, but using causa instead of rice and seaweed. Causa is a cold yellow potato doe with lime juice. Some rolls in the picture have shrimp with avocado and some have tuna tartare with toasted sesame oil sauce.

Tiradito con Aji (Tiradito with Peruvian hot pepper)


Tiradito is the new cebiche, which uses very thin fish (or seafood) slices lightly marinated and almost raw. This tiradito is with Chilean Seabass, marinated in lime juice with an Aji cream sauce. Aji is a Peruvian yellow hot pepper -- and the tastiest hot pepper on the planet.

Jamon del Pais para Butifarras


Jamon del pais is a typical country ham made by roasting or boiling a fresh ham with spices. A butifarra (Peruvian, because Spanish butifarras are completely different) is a sandwish with jamon del pais, Peruvian criollo salsa (onions in lime juice), lettuce, hot pepper, etc. Yummy.

Chupe de Camarones y Causa Rellena


Shrimp chupe is a soup with some milk, eggs, potatoes, rice, etc. Causa is a cold potato doe stuffed with anything you like. The one in the picture is vegetarian (tomatoes, corn, avocados, hard boiled eggs).

Tiradito de Conchas (Scallops Tiradito, w Cucumber)


Tiradito is the new cebiche, but the seafood or fish are cut in very thin slices and served almost raw, like a ceviche-sushi fusion.

Home made, my own recipe. Lucuma is a Peruvian fruit, not that great to eat by itself, but excellent for desserts (mousse, ice cream).
